Gilles Paris
Gilles Paris comes from a long line of vigneron in Beaujolais. He's worked in the regions vineyards for his entire life tending the vines of his family and in-laws. Today, he cares for 8 hectares of his own vines in Chiroubles, Fleurie, and Morgon. He's always farmed organically, but took the step to be certified in 2023. During COVID, he was joined by his daughter Justine in the winery and office, passing the baton to the next generation.
All wines are 100% gamay, made with carbonic maceration. There are no additions or subtractions during the winemaking, and the wines age in old barrels for 10-12 months.

'Grand Pré'
100% Gamay from Fleurie lieu-dit Grand Pré which is on a plateau located at the crossroad between Chiroubles, Fleurie and Morgon. 50 year old vines. Made with carbonic maceration and aged in 5-15 year old barrel for 10-12 months.

'Vieille Vignes'
100% Gamay from Chiroubles. A blend of several plots that are 70 years-old on a 515 meters altitude plateau at the top of the Chiroubles appellation. The majority comes from the lieu-dit Cercillon. Made with carbonic maceration, and aged in 5-15 year old barrel for 10-12 months.
