Cantina Cenci
Giovanni Cenci is the third generation to farm and make wines at Cantina Cenci, but grapegrowing on his plots in Umbria can be dated back to 1623. Then the land was tended by Olivetan monks. The lands were replanted with vines in the 1950s by Giovanni's grandfather. He planted Grechetto and Sangiovese which today constitute the estate's top holdings along with plantings of Trebbiano, Pinot Grigio, and Merlot. All farming and winemaking is certified organic. Only native yeasts are used in the cellars, and the wines are made with minimal manipulation.

'Giole' Trebbiano IGT Umbria
Named after benefactor of the Olivetan monks who founded the estate, this 100% Trebbiano grows on calcareous silt soils on a gentle south facing slope. Grapes are harvested in mid-September, see 1 hour of skin contact after crushing, and ferment at low temperatures in stainless steel. The wine is aged for 7 months in stainless steel tanks with frequent battonage.

'Anticello' Grechetto IGT Umbria
Grechetto is a unique grape with thick skins, rich phenolic character, and balanced acidity. Harvested in mid-September, the grapes are crushed and see 1 hour of skin contact. Fermentation occurs at low temperature in stainless steel before the wine is racked to 80% stainless steel tank and 20% used barrels for 7 months of aging with frequent battonage.
